In Review-The art of the fluffy upside down peach pie. Using a skillet and heavy wiping creme with peaches. This pie has some good foodie reviews.
Delicious pie a must try and was featured in: Is It Southern Food, Or Soul Food?.
Ingredients Include:
- 4 medium peaches (about 1 1/2 pounds/680 grams), unpeeled and cut into 1/3-inch-thick wedges
- Juice of 1 lemon1 cup/130 grams cake flour, not self-rising
-¾ teaspoon baking powder¼ teaspoon
-baking soda1 cup/200 grams granulated sugar5 ounces/140 grams
-unsalted butter (1 stick plus 2 tablespoons), at cool room temperature
1 vanilla bean, split and seeds scraped, or 1 teaspoon pure vanilla extract
-2 large eggs½
-cup sour cream
FOR THE BOURBON WHIPPED CREAM (OPTIONAL):
½ cup heavy cream1 tablespoon bourbon

This dessert pie has a passive voice on how to make the pie. The Pie was very good as I made it personally and it was very good.
